It’s the last day of February, and what a fun month it was!
It’s hard to believe March will be here tomorrow, which means spring is right around the corner!

Before we jump in to a new season, let’s take a look back and see how we made the most of the short but sweet month of February!

WHAT WE DID BEHIND THE SCENES IN February
Watched the Super Bowl Commercials
I wish I could say I love sports and enjoy watching them on TV!
But the truth is, I’m not a big sports fan!
However, Rich is, and he watched the Super Bowl game, and I occasionally looked up from my Woodoku puzzle to catch the commercials!
For me, the best part of the game is the food!
Honestly, our menu has changed considerably since I avoid gluten and dairy.
This year we made chicken wings, potato skins, and a new treat I want to share with you, in case you know someone with the same food sensitivities!


I adore Auntie Anne’s Soft Pretzels but have not had one in over five years, so imagine how thrilled I was when Rich saw this product and ordered it for me!
These fabulous pretzel bites are so yummy and the closest thing I’ve found to Auntie Anne’s!

Celebrated My Birthday
Oh, my goodness, friends, I had a big birthday in February!
I don’t know how it’s possible, but I turned 60!
We had dinner at Ragland Road Irish Pub and Restaurant in Disney Springs to celebrate!
I chose it because they have excellent gluten/dairy-free fish and chips and this yummy allergy-friendly appetizer!

It’s called “Sure I’m Frittered” and is made with free-form broccoli and corn fritter with a sweetcorn puree and fire-roasted pepper relish.

Here is my yummy fish and chips! They’re so good you would never think they were gluten-free!
Besides the fabulous food, we had the best table by the stage where we could see the Irish dancers.

They are so talented and were a joy to watch!
Then we were treated to more wonderful entertainment!

These guys were great, and we thoroughly enjoyed their performance!
After dinner, we strolled around the shops and went to Erin McKenna’s Bakery for dessert.
We were too full to eat it there and got it to go!

I am home with my super good chocolate “XOXO Hostess Cupcake.”
We feel so fortunate to live someplace with access to allergy-friendly food establishments!
Anyway, I don’t feel older, but things are definitely changing (hello wrinkles)!
Maybe it’s just the picture, but I need something to help with dark circles under my eyes, lol!

Celebrated Valentine’s Day
Rich took Valentine’s Day off because I had an eye appointment that morning and wanted him to drive me.
Unfortunately, I am having an issue with blurred vision in my left eye and discovered at the appointment that I have something called Anterior Basement Membrane Dystrophy.
I’m scheduled to have eye surgery in April.
I had never heard of it before, so if you have this or know someone who does, let me know.
After the appointment, we headed to the second Antique and Collector’s Extravaganza of 2025 at Renninger’s.
I didn’t have as much luck at this one as I did in January, but I did pick up a few items.

First, I found these fabulous vintage tissue and toilet paper holders I plan to use in our half bathroom.
I purchased the rake and doilies for upcoming challenges with The Handcrafted Society.
If you’re new here, I belong to a group of bloggers who come together each month to share creations centered around a specific theme or craft medium.
In March, we are challenged to upcycle an item found in a garden shed; in May, we are challenged to use doilies as a tool or medium to create something!
I hope you’ll stick around to see what I come up with!
Next, we had lunch at our favorite gluten-free restaurant in Mount Doar called the Salted Fry!
It wasn’t the most romantic Valentine’s Day we’ve had, but it was fun!
I’m so grateful to have a spouse that takes such good care of me!
Enjoyed Disney Parks
Rich and I have annual passes for Disney World and enjoy spending time in the parks when it’s not hot!!
We try to go as often as possible during this time of the year.
Said Goodbye to Attractions at Hollywood Studios
Disney will close several attractions at Hollywood Studios to make room for a new land!
The entire section of Muppets Courtyard will close and be replaced by a brand new Monster’s Inc. land.
Although we’re excited about what’s up and coming, we wanted to say goodbye to Muppet’s Courtyard.

Here we are in front of Muppet-Vision 3D, a fun movie and great place to rest when it’s hot outside! It will close on June 7, along with PizzeRizzo counter service restaurant.
This place has sentimental value for our family because on every trip we go on, we always get a family picture in front of the Miss Piggy Fountain!

So we wanted to be sure to get one last picture there!

We dined for the last time at Mama Melrose’s Italian Restaurant, which will close on May 10.
It’s not our favorite restaurant in the park, but they always do a great job making dishes I can eat!
Babies at Animal Kingdom

There’s a new baby tiger at Animal Kingdom and he is adorable!
His name is Basko and you can learn all about him here!
We’ll visit Animal Kingdom more frequently to watch him grow!
But he’s not the only new baby in the park!
A Malayan great argus pheasant has two chicks in the aviary on the Maharajah Jungle Trek!

Sorry this picture is so blurry, and you can only see one of the chicks. They were constantly on the move!

This sweet mama duck walked around the park with seven little ones following her!
They are so precious to watch!

We made sure to spend some time in Dinoland because Disney will replace this park section with a new Tropical Americas-themed land called Pueblo Esperanza.
Sadly, TriceraTop Spin, Fossil Fun Games, and Chester and Hester’s Dinosaur Treasure shop closed on January 13.
We’re unsure how long Restaurantosaurus, The Boneyard, and Dinosaur will remain open, so we took a ride just in case!

If you’re wondering, the new land will have an Indiana Jones and Encanto-themed attractions.
Final fun at Festival of the Arts
The Festival of the Arts at Epcot ended on February 24, but we were able to go several times!
One of this festival’s special treats is watching the Disney On Broadway Concert Series!
These are performances given by stars who appeared in Disney shows on Broadway.

Here are Kara Lindsay (Newsies) and Rodney Ingram (Aladdin)!
Their voices are so incredible, and they have such extraordinary talent!
And we can’t forget the food!

Rich will miss this sushi donut, which features salmon, tuna, shrimp, avocado, and masago accented with citrus-soy gelée and wasabi on the side.
Now, we patiently await the International Flower and Garden Festival, which starts on March 5 and runs through June 2!
