How are you doing with the time change?
It seems as if the older I get, the harder it is for my body and mind to adjust!
I feel ready for bed at 8 pm, and no matter what time I fall asleep, I wake up by 5 am!
I know eventually I will adjust, but I wish this did not occur twice a year!
What We’ve Been Up To This Week
We had a fabulous time celebrating our 29th wedding anniversary at Disney!
We stayed two nights at The Coronado Springs Resort.
On the first day, we visited Magic Kingdom!
It’s already decked out for Christmas, and we enjoyed seeing all the festive decorations!
Then, we parked hopped over to EPCOT for the second half of the day and dinner!
On the second day, we visited Animal Kingdom.
The weather was fabulous, cool in the mornings and evenings but perfect during the day!
We took tons of pictures, and I wish we could share them all, but you would probably be bored!
So, instead, we’ll share the highlight of the weekend, which was our anniversary dinner!
That evening, we ate at Toledo, a restaurant on the top floor of the hotel.
If you are new to the blog, you might not know that we mainly eat out at Disney restaurants because they can accommodate my food sensitivities to gluten and dairy.
We had the best server, Ashley, who knew how to modify our meals to meet my dietary needs!
For our appetizer, we had the Flight of Four Pintxos, which consisted of chilled mussels Escabèche, olive oil-poached tuna with lemon, Tortilla Española Spanish potato omelet, and the Valdeón blue cheese with fig, and honey.
And the Chef’s signature selection of artisanal charcuterie and cheeses (Rich ate all the cheese)!
For our main course, we shared this aged, hand-cut Spanish chuletón (28-ounce bone-in rib-eye steak) with Brussels sprouts and fingerling potatoes.
The meal was fabulous, and the steak was perfection!
For dessert, we chose the only allergy-friendly item that worked for me.
It was chocolate avocado mousse with strawberry-basil sorbet and coconut crumble.
It was the only part of the meal we did not enjoy.
Even though we didn’t like the dessert, I think we found our new favorite restaurant.

Such a fun way to celebrate your anniversary, Donna! I love that you guys go all out from the mouse ears to the hotel to the food and make lots of memories along the way.
