I am finally finished decorating, and now I’m turning my thoughts to gift wrapping and Christmas cards!
December brings a lot of extra work, but I’m so excited about celebrating with friends and family, which makes it all worth it!
As usual, we tried to fit in a little bit of fun in between all the work!
What we’ve been up to this week
One of the best perks of living in central Florida, other than the weather, is deciding, at the last minute, to go to a theme park for dinner!
The Festival of the Holidays is happening at EPCOT, and we decided to hit the food booths for dinner!
Our favorite for the night was the Las Posadas Holiday Kitchen at the Mexico Pavilion.
The dish on top is the Tamale de Barbacoa: Shredded Barbacoa Beef in a Corn Masa topped with Mole Negro, Queso Cotija, Crema Mexicana, and Pickled Onions.
It was delicious, but our favorite dish was the item at the bottom of the picture.
The Giant Tostada de Chorizo is topped with Chipotle Black Bean Purée, Ground Chorizo, Salsa Verde, Queso Cotija, Crema Mexicana, and Pickled Onions.
It was so good, we’ll probably get it again the next time we visit!
We enjoyed the food and loved seeing this gigantic Christmas tree and lights throughout the park!
It’s such a magical place!
We are back at the festival today to attend the Candlelight Processional!
It’s a new holiday tradition for us!

Wow! That really is a GIANT Christmas tree. Also the Mexican posadas look truly delicious. Just wanted to pop on over and catch up with you and say hello.
