What We’ve been up to this week
Can I tell you it has been hard to get into a work routine after being on vacation for 11 days?
Good thing Rich had a birthday, so we had an excuse to take another day off to celebrate!
Rich’s Birthday
We’ve been to the EPCOT Flower and Garden Festival several times this year but have not attended the Garden Rocks Concert Series.
During the Festival, popular bands take the stage at the American Gardens Theater to share some of their greatest hits with the crowds! Internationally known artists perform Friday through Monday, and local bands rock the stage Tuesday through Thursday.
We saw one of our favorite Christian music artists, Casting Crowns! They were fabulous!
We booked a Garden Rocks Dining Package to guarantee we would have seats for the concert. If you’re going to eat there, we highly recommend doing this so you won’t have to wait in the standby line for hours!
Rich loves seafood, so he chose to eat at The Coral Reef Restaurant. Every table has a view of their beautiful aquarium. We enjoyed watching sharks, stingrays, and many fish swimming in the water!
The dining package includes a non-alcoholic drink, appetizer, entree, and dessert for each person.
For the appetizer, Rich chose the seafood artichoke dip, and I had the shrimp cocktail.
Next came the entree, and Rich decided on the Cajun-grilled shrimp with a seared grit cake, andouille hash, and Cajun emulsion. I had the 10-oz slow-roasted prime rib with roasted potatoes, caramelized onions, and mixed herb pistou.
For dessert, we both indulged by eating the Baileys Almande and Jack Daniels Mousse with chocolate ganache and candied almonds.
It was so yummy I could not believe it was dairy and gluten-free!
We enjoyed the entire meal, but we may go back there to eat dessert because it was that yummy!!!
